- 0.5 tablespoon(s) Olive Oil
- 1 Garlic Clove, minced
- 0.5 Onion, diced
- 2 cup(s) Cauliflower, diced
- 8 ounce(s) Water
- 1 Packet of ITG Cream of Chicken or Cream of Mushroom Soup Mix
- 1 dash(es) Sea Salt and Pepper to Taste
ITG Cauliflower Soup Directions
- Heat oil in medium size pot, over medium heat. Add garlic and onion, sautee until soft and fragrant. (Be careful to not caramelize the onions.)
- Add diced cauliflower, water and ITG soup packet and bring to a boil. Reduce heat and simmer for 15-20 mins. or until cauliflower is softened.
- Carefully pour contents from the pot into a blender and blend well. Add sea salt and pepper to taste.
- Top with fresh herbs of your choice (basil, rosemary or even green onions works well).
